This fried brinjal curry is a savoury and sweet haven with just the right balance of flavours. Trust us when we say it’s a keeper – and what’s a better time to test out this curry with your family, than this festive season?
Here’s how you can make it with Serà!
Ingredients:
Brinjal 5 nos
Oil 1 tsp
Green Chilli 5 nos
Onion 1 large
Cinnamon 1 inch
Fenugreek 1/2 tsp
Curry Leaves
Rampe
Ginger + Garlic 1 tsp
Serà Chilli Powder 1 tsp
Serà Turmeric Powder 1/4 tsp
Serà Curry Powder 1 tsp
Serà Salt 1 tsp
Sugar 1 tsp
Vinegar 1/2 tsp
Serà Coconut milk 1/2 cup
Capsicum 3 nos
Water 1/2 cup
Method:
Start by splitting the brinjals into 4 pieces without seperating it from the stem and frying it in hot oil until it turns golden brown.
To a separate pot, add oil, green chilli and onion, and give it a stir.
Next, add cinnamon, fenugreek, curry leaves, rampe, ginger, garlic, Serà chilli powder, Serà turmeric powder, Serà curry powder, Serà salt, sugar and vinegar, and mix.
Pour Serà coconut milk into the pot along with the fried brinjals and capsicums, and stir to combine.
Finally, add some water to the pot, let it simmer for a few minutes and take it off the heat. Enjoy!
