Drumstick (Murunga) Curry | Cooking with Aunty D

Something as simple as a drumstick curry, or as we know it, murunga curry carries many nutritional benefits.

Ingredients:

Drumsticks 500 g
Thin Coconut Milk 1 1/2 cups
Fenugreek 1/2 tsp
Green Chilli 2 nos
Big Onion 1 small
Turmeric Powder 1/2 tsp
Curry Powder 1 tsp
Salt 1 tsp
Garlic 3 cloves
Curry Leaves + Rampe
Small Red Onion 5 nos
Thick Coconut Milk 1 1/2 cups
Lime Juice

 

Method:

To a pan add drumsticks, thin coconut milk, fenugreek, green chilli, big onion, turmeric powder, curry powder, salt, garlic, curry leaves and rampe.

Mix well, and close the lid to let it simmer.

Next, add small red onions and thick coconut milk to the simmered drumsticks, and mix again.

Once it’s done cooking, turn off the heat and squeeze the juice of half a lime into the curry.

Give it one last mix and your healthy drumstick curry is ready to be served!
