Vegetable Chop Suey | Cooking with Aunty D

As easy as a chop suey is to make, not a lot of us make it at home.

Here’s Aunty D’s take on a chop suey packed with colourful and nutritious veggies. 

Let’s get chopping! 

 

Ingredients: 

Chinese Cabbage 50 g

Green Beans 10 nos 

Potato 1 large 

Carrot 1 large 

Butter 1 tbsp

Garlic 3 cloves 

Big Onion 1 medium 

Water 3/4 cup

Salt 1/2 tsp 

Pepper 1/4 tsp 

Soy Sauce 1 tbsp 

Sugar 1 tsp 

Corn Flour 1 tsp 

 

Method:

Slice the Chinese cabbage, green beans, potato, and carrot into bite-size pieces.

Heat a pan and add butter, diced garlic and big onion, and lightly fry.

Next, add the sliced potato, carrots and water to the pan, and let it simmer.

Add salt and pepper and mix well.

Add the sliced beans and let it boil. 

Add soy sauce and mix well.

Finally, add the chopped Chinese cabbage, sugar and diluted cornflour mixture, and stir until everything is well combined. 

And voila, you have a delicious vegetarian side that you can enjoy!
