Grab your chopsticks and apron – it’s time to create a bowl of pure comfort that will transport you to the world of slurp-tastic homemade ramen!
Here’s Aunty D’s take on it!
Ingredients:
Bok Choy 1 small
Noodle 150 g
Olive Oil 2 1/2 tsp
Carrot 1 small
Garlic 3 cloves
Chilli Flakes 1 tsp
Leeks 1/8 cups
Chili Paste 1 tsp
Soy Sauce 1 tsp
Stock 1 1/2 cups
Tofu 100 g
Egg 1 nos
Method:
To a pot of water, add the bok choy and bring it to a boil.
Once the bok choy is blanched, remove it from the pot.
In the same pot, add the noodles and cook them until translucent.
Remove the pot from the stove once the noodles are cooked.
In a separate saucepan, heat the olive oil and sauté chopped carrots.
Remove it from the heat, and keep it aside.
In the same saucepan, add olive oil, garlic and chilli flakes.
Sauté the chilli paste for a bit, before removing it from the heat and keeping it aside.
In a clean saucepan, add olive oil, chopped leeks, chilli paste, and soya sauce.
After giving it a stir, add chicken stock and give it a good mix.
Finally, assemble the ramen in a bowl with the stock mixture first, then the cooked noodles, bok choy, carrot, tofu and boiled egg, sliced in half. Enjoy!
