Serà Chicken Curry | Cooking with Aunty D

A traditional chicken curry is a classic and an all-time favourite for any Sri Lankan! Paired with rice, hoppers, string hoppers or some warm roast paan, it’s a hit for any meal. So why not add it to your Christmas lunch or dinner spread?

Here’s how you can make it with Serà!

Ingredients:

Chicken Thighs 10 nos

Serà Chilli Powder 2 tsp

Serà Black Pepper Powder 1 tsp

Vinegar 1 tsp

Serà Salt 1 1/2 tsp

Serà Turmeric Powder 1/2 tsp

Ginger + Garlic 1 tbsp

Serà Roasted Curry Powder 1 tsp

Oil 1 1/2 tbsp

Cinnamon 1 inch

Cloves 4 nos

Cardamom 3 nos

Lemongrass 1 1/2 inch

Fenugreek 1/2 tsp

Curry Leaves + Rampe

Onion 1 medium

Green Chilli 1 nos

Serà Coconut Milk 1/2 cup

Water

 

Method:

Place the chicken thighs in a bowl and add in Serà Chilli powder, pepper, vinegar, salt, turmeric, ginger, garlic and Serà Roasted Curry powder. Mix well and set aside to marinate for 30 minutes.

Next, heat up some oil in a pot and add cinnamon, cloves, cardamom, lemongrass, fenugreek, curry leaves, rampe and sliced onion, and stir well.

Add the marinated chicken into the pot and stir until well combined.

Next, add sliced green chillies and water to cover the chicken, and let it simmer.

Pour the thick coconut milk into the pot, stir and cover the pot with a lid to continue cooking.

Give the curry a final mix and take the pot off of the heat. Serve it alongside a plate of steamed rice or any main of your choice and enjoy!
