Pumpkin Curry with Roasted Coconut | Cooking with Aunty D

Ingredients:

COCOnut Frozen Grated Coconut 1/2 cup

Pumpkin 500 g

Water 1/4 cup

Salt 1 tsp

Garlic 2 cloves

Red Onions 6 nos

Roasted Pepper 1/2 tsp

Raw White Rice 1/8 cup

Water 1/8 cup

Sugar 1/8 tsp

Turmeric 1/4 tsp

Green Chilli 2 nos

Curry Leaves

Rampe

Chilli Powder 1/2 tsp

 

Method:

First add COCOnut Frozen Grated Coconut into a pan and roast until golden brown.

Add Pumpkin into a pot followed by water and salt and boil.

Next, add garlic, red onions, roasted pepper, raw white rice, roasted coconut and water to a blender and blend until a paste is formed.

Finally add the paste to boiled pumpkin followed by water, sugar, tumeric, green chilli, curry leaves, rampe and chilli powder.

Cook until done and serve!
