Potato Bonda | Cooking with Aunty D

We can never have enough ways to eat potatoes! Speaking of, have you tried Potato Bonda?

The popular South Indian street food is a ball-shaped fritter stuffed with spicy potato filling that makes up for a perfect snack –it’s even better homemade!

Here’s how it’s done!

Ingredients:

Chickpea Flour 1 cup

Rice Flour ¼ cup

Chilli Powder 1 tbsp

Salt 1 ⅓ tsp

Water

Oil 1 tbsp

Mustard Seeds ½ tsp

Green Chilli 3 nos

Garlic 3 cloves + Ginger ½ tsp

Curry Leaves

Big Onion 1 large

Turmeric ½ tsp

Curry Powder 1 tsp

Coriander Leaves ¼ cup

Boiled Mashed Potatoes 500 g

 

Method:

To make the batter, whisk together chickpea flour, rice flour, chilli powder, salt and water.

Heat up a pan with oil and begin frying mustard seeds, green chilli, garlic, ginger, curry leaves, chopped onion and turmeric.

Next, add curry powder, coriander leaves, mashed potatoes and salt to the pan and stir well to combine.

Once the mixture is cooked and cooled down, form bite-sized balls of the mixture, coat them in the batter and fry in hot oil until golden.

Serve with some chutney or a condiment of your choice and enjoy!
