Pol Cake | Cooking with Aunty D

Ingredients

Coconut 250 g

Coconut Treacle 2 cups

Salt ¼ tsp

Vanilla Essence 2 tsp

Cardamom 2 nos

Melted Margarine ½ cup

All-Purpose Flour 250 g

Baking Powder 2 tsp

Baking Soda ¼ tsp

 

Method: 

1.Add grated coconut into a pot and pour in the coconut treacle and salt.

2.Mix thoroughly to combine the ingredients.

3.Let the mixture cook for a few minutes.

4.Remove the pot from the stove and add in vanilla essence, crushed cardamom and melted margarine.

5.Give it a good mix.

6.Then, mix all-purpose flour and baking powder together and add baking soda to this flour mixture.

7.Add it to the coconut mixture in batches.

8.After a good mix, transfer the mixture in to a lined baking tray and top it with cashews.

9.Put the tray into the oven and bake at 180C for 35 – 40 minutes.
