What goes better with chapati than Mutton Masala? Among a zillion ways to make this hot and delicious curry, here is Aunty D’s take on it!
Ingredients:
Oil 2 tbsp
Big Onion 1 large
Tomato 2 large
Ginger + Garlic Paste 1 tbsp
Turmeric Powder 1/2 tsp
Chilli Powder 1 1/2 tsp
Coriander Powder 1/2 tbsp
Salt 1 1/2 tsp
Garam Masala 1 tsp
Mutton 500 g
Cashew 25 g
Peppercorn 15 nos
Cumin 1/2 tsp
Fennel 1/4 tsp
Curry Leaves
Red Onion 6 nos
Grated Coconut 1/4 cup
Coriander Leaves
Method:
To a heated pan, add oil, finely sliced onions, tomatoes and ginger-garlic paste, and sauté them.
Add turmeric powder, chilli powder, coriander powder, salt and garam masala to the same pan and combine well.
Add the prepped mutton cubes to the pan and stir everything together until the meat is coated with the spice mixture.
In a separate pan, roast cashews, peppercorns, cumin, fennel, curry leaves, red onions, and grated coconut.
Once roasted, remove the mixture from heat and blend it until smooth.
Add the blended cashew mixture to the mutton mixture and combine while cooking.
Add water to cover the mutton, close the pan with a lid, and let it simmer gently.
As the curry simmers, top it up with some fresh coriander leaves for enhanced flavour and fragrance.
