Ladies Fingers Curry | Cooking with Aunty D

Ingredients: 

Oil (to fry)

Ladies Fingers 500g

Capsicum 2 nos

Oil 1 tbsp

Big Onion 1 large

Curry Leaves

Rampe

Cinnamon 1/2 inch

Cardamom 2 cloves

Fenugreek 1/2 tsp

Ginger 1 tsp

Garlic 1 tsp

Turmeric 1/2 tsp

Curry Powder 1/2 tsp

Chilli Powder 1 1/2 tsp

Salt 1 tsp

Thick Coconut Milk 1 cup

Vinegar 1 tsp

Sugar 1/2 tsp

Method: 

First, add the ladies fingers into a pan of hot oil and remove once fully cooked. Do the same for the capsicums.

Next, add oil into a new pan followed by big onions, curry leaves, rampe, cinnamon, cardamom, fenugreek and mix well.

Add ginger, garlic, turmeric, curry powder, chilli powder, salt, ladies fingers, capsicum into the same pan and mix with the other ingredients.

Next, add thick coconut milk into the pan followed by vinegar and sugar.

Finally, mix all the ingredients together and remove them from heat once fully cooked.
