Black Pork Curry | Cooking with Aunty D

This Black Pork Curry is bursting with bold flavors and melt-in-your-mouth pork!

Ingredients:

Oil 1 1/3 tbsp
Chilli powder 2 tbsp
Pork 500 g
Pepper 1 tsp
Salt 2 tsp
Ground goraka 1 tbsp
Ginger + garlic 1 1/2 tbsp
Cinnamon 1 inch
Clove 5 nos
Cardamom 3 nos
Lemongrass 1 stem
Curry leaves + rampe
Onion 1 medium
Water
Green chilli 2 nos
Dark roasted curry powder 1 tbsp

Method:

To a pan over heat, add one tablespoon of oil and chilli powder to roast it.

In a separate bowl, add cubed pork before tossing in the roasted chilli powder, pepper, salt, ground goraka, ginger and garlic for that extra kick of flavour.

Let your pork marinate for 30 minutes.

To a pan over heat add one teaspoon of oil, cinnamon, cloves, cardamom, lemongrass, curry leaves, rampe, a thinly sliced onion and finally the marinated pork.

Cover the pork with water before adding green chillies, and bring it to a simmer.

Finally, mix in dark roasted curry powder, and let it simmer till the gravy darkens.

Serve it up for your family with your rice and curry and enjoy!
