Athirasa | Cooking with Aunty D

Athirasa – An Avurudu treat bursting with sweetness!

This festive season, treat your friends and family to some homemade athirasa. Keep watching to see how it’s done!

Ingredients:

Rice 1 cup
Cumin 1/2 tbsp
Sugar 1 cup
Water 1/2 cup
Coconut Treacle 1/2 cup
Salt 1/3 tsp
Raw Rice Flour 500 g

Method:

Roast the rice in a pan until golden brown.
In a separate pan, roast the cumin seeds.
Caramalise sugar with water in a pot and add coconut treacle, roasted cumin, roasted rice and salt into it.
Let the mixture simmer.
Gradually add raw rice flour into the pot and combine until the batter turns into a dough-like texture.
Transfer it to a bowl and roll them into bite-sized balls.
Flatten the dough balls until they take the shape of biscuits.
Fry them one at a time until golden and voila! You have yourself some tasty Athirasa Kavum. Enjoy!
