Chicken chirga, a variation on the traditional Mogul tandoori chicken, is readied for the expected Friday night crowds in Colombo’s inner city area of Aluthkade. Chirga is marinated in the usual mix of tandoori masala spices and dahi yoghurt before being roasted over coals instead of in an oven. Tandoori chicken could be the world’s oldest surviving dish; tandoori style ovens have been found in the ruins of the Bronze Age Harappan Civilisation of India and Pakistan, dating to 3000 BC.
