Mutton Curry | Cooking with Aunty D

 

Ingredients:

Mutton 500g

Pepper 1 tsp

Salt 1 tsp

Turmeric 1/2 tsp

Coriander Powder 1/2 tsp

Chilli Powder 1 1/2 tsp

Unroasted curry powder 1/2 tsp

Tamarind juice 1/4 cup

Oil 1 tbsp

Cinnamon 1 inch

Cloves 4 Nos

Cardamom 2 Nos

Fenugreek 1/2 tsp

Curry leaves + Pandan (Rampa)

Lemongrass

Onion 1 small

Tomato 2 big

Ginger+Garlic 1 tbsp

Green Chilli 2 nos

Coriander leaves 1/2 cup

Thick coconut milk 1 1/4 cup

Oil 1 tbsp

Bombay onion 1 medium

Curry leaves

Pandan (Rampe)

Ginger 1 tsp

Garlic 1 tsp

Method:

  1. Add salt, pepper, turmeric, coriander powder, chilli powder, unroasted curry powder and tamarind juice to the mutton. Mix well and leave aside to marinate for 20 minutes.
  2. Add oil to a pan and add cinnamon, cloves, cardamom, fenugreek, curry leaves, pandan, lemongrass, onion, tomatoes, ginger and garlic and stir well.
  3. Then add marinated mutton, green chilli, half of the coriander leaves and thick coconut milk. Close lid and leave for a few minutes.
  4. Add the rest of the coriander leaves and keep mixing. Serve while hot.
