Ingredients:
Mutton 500g
Pepper 1 tsp
Salt 1 tsp
Turmeric 1/2 tsp
Coriander Powder 1/2 tsp
Chilli Powder 1 1/2 tsp
Unroasted curry powder 1/2 tsp
Tamarind juice 1/4 cup
Oil 1 tbsp
Cinnamon 1 inch
Cloves 4 Nos
Cardamom 2 Nos
Fenugreek 1/2 tsp
Curry leaves + Pandan (Rampa)
Lemongrass
Onion 1 small
Tomato 2 big
Ginger+Garlic 1 tbsp
Green Chilli 2 nos
Coriander leaves 1/2 cup
Thick coconut milk 1 1/4 cup
Oil 1 tbsp
Bombay onion 1 medium
Curry leaves
Pandan (Rampe)
Ginger 1 tsp
Garlic 1 tsp
Method:
- Add salt, pepper, turmeric, coriander powder, chilli powder, unroasted curry powder and tamarind juice to the mutton. Mix well and leave aside to marinate for 20 minutes.
- Add oil to a pan and add cinnamon, cloves, cardamom, fenugreek, curry leaves, pandan, lemongrass, onion, tomatoes, ginger and garlic and stir well.
- Then add marinated mutton, green chilli, half of the coriander leaves and thick coconut milk. Close lid and leave for a few minutes.
- Add the rest of the coriander leaves and keep mixing. Serve while hot.
