Durian Cake | Cooking with Aunty D

We know what you’re thinking, but don’t knock it till you try it!

Durian is notorious for its strong smell, but don’t let the aroma turn you away from attempting this Durian cake by Aunty D. It’s sweet, toothsome and imbued with buttery durian flavour, but not overpoweringly so – a bizarre treat to blow anyone’s mind!

Here’s how you make it!

Ingredients:

Margarine 125 g

Sugar 125 g

Eggs 2

Durian 1 ½ cup

Vanilla 2 tsp

Flour 125 g

Baking Soda ½ tsp

 

Method:

To a large bowl, add butter and sugar and whisk to combine.

Continue whisking, adding one egg at a time until the mixture reaches a smooth texture.

Mix the deseeded durian flesh and vanilla into the bowl.

In a separate bowl, combine flour and baking soda and incorporate the dry ingredients with the wet ingredients.

Fold the batter thoroughly to remove any lumps, pour into a lined baking tin and bake at 150 °C for 35 to 40 minutes.

Once it’s out of the oven, let the cake cool down, grab a slice and enjoy!
