Ingredients:
White Raw Rice 2 cups
Water
Grated Coconut 1 cup
Sugar 1 tbsp
Beer 1 cup
Salt 1 tsp
Thick Coconut Milk ¾ cup
Method:
Submerge white raw rice in a bowl of water and leave to soak for 30 minutes.
Drain the soaked rice and add into a blender with grated coconut, sugar and beer.
Pour the blended mixture into a bowl and leave to rest for 2 ½ – 3 hours.
Combine salt and thick coconut milk into the rested batter and stir well to remove any lumps.
Add a scoop of batter into a heated hopper pan and swirl it around the pan to form a hopper shape.
Finally, cover the pan and leave to cook for 1 – 2 minutes and it’s ready to be served!
