Snake Gourd Curry | Cooking with Aunty D

 

Ingredients: 

Snake Gourd 500g

Green Chilli 2 nos

Fenugreek 1/4 tsp

Bombay Onion 1 small

Curry Leaves/Rampe

Curry Powder 1 tsp

Turmeric 1/4 tsp

Salt 1 tsp

Garlic 10 cloves

Thin Coconut Milk 1 cup

Red Onion 4 nos

Ground Mustard 1/2 tsp

Method: 

  1. Add snake gourd, green chilli, fenugreek, bombay onion, curry leaves/rampe, curry powder, turmeric, salt, garlic and thin coconut milk to a pot. Mix and cover with a lid. Let sit for a few minutes.
  2. Add red onion, ground mustard and thick coconut milk. Mix well. Serve while hot.
